Low-Calorie Alfredo Sauce

Enjoy this low-calorie, butter-free, but still super smooth and creamy Alfredo sauce!

Ingredients
1 TBSP olive oil
4 cloves garlic, minced
3 TBSP flour
1 cup chicken broth (I used low-sodium)
1 cup lowfat milk (I used skim)
3/4 cup freshly grated parmesan cheese
1/2 TSP salt
1/4 TSP ground black pepper

  1. Heat olive oil in a large saute pan over medium-high heat. Add garlic and saute for 1 minute. Sprinkle with flour and whisk to combine. Saute for 1 minute to cook flour.
  2. Slowly add chicken broth, whisking to combine until smooth. Whisk in milk, and bring the mixture to a simmer. Let cook for an additional minute until thickened, then stir in parmesan cheese until melted.
