Fujian-style Fried Noodles

This is my Dad’s recipe that I’ve adapted to be easy to cook on weeknights.

Time

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients

Meat Marinade

  • 1 pound ground pork, beef, or chicken
  • 1 tablespoon of corn starch
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of sesame oil

Noodles

  • 1 small cabbage
  • 4 sliced scallions
  • 3 slivers of ginger
  • 2 oz brandy
  • 8 oz chicken broth
  • 16 oz. Egg Noodles
  • 2 Tbsp. Soy Sauce
  • 1 Tbsp. Oyster Sauce

Instructions

  1. Cook one package of noodles in boiling water according to the directions. Drain and rinse under cold water.
  2. In a large bowl, mix the ground pork, corn starch, soy sauce, pepper and sesame oil.
  3. In a large wok or skillet, heat 2 tablespoons of oil on high heat and brown the slices of ginger
  4. Add the marinated ground pork to the wok, and stir fry for 2 minutes.
  5. Add the brandy, cabbage, and stir for about 30 seconds.
  6. Add 8 oz of chicken stock, 1 tablespoon of oyster sauce, and 2 tablespoons of soy sauce to the mix. Add green onions.
  7. Add the drained noodles and then stir together. Season with more ground black pepper and soy sauce to taste.
