Morning number 4 in Virginia and given that I still have no job, I have plenty of time to embrace an extended morning routine, which involves breakfast, always. I found this recipe from Shape magazine through Pinterest. My photo looks quite different from the one on the website for a few reasons. I sliced grape tomatoes, used half an onion and added herbs de provence, dried basil and a clove of chopped garlic.
Today was another experiment in attempting different ways to make an egg. I wouldn’t say I conquered frying, but it was a good first effort. I’m saving poaching for last because that seems the most complicated. Someone tried to teach me once, but his instructions didn’t really stick. This recipe is super simple, fairly healthy and nice to eat with a fresh slice of bread from Ablemarle Baking Company.


It takes all of ten minutes to prepare and is worth the extra effort in the morning. I unintentionally fried the egg a minute longer than necessary, butit was still eggcellent (pun intended).
Who broke the fast? Well, I wasn’t fasting, but I thoroughly enjoyed this breakfast.
