Recipe #97 Southwestern Stuffed Sweet Potato 

Final Day Snow Eats


First, sweet potatoes are amazing. They are delicious without needing to add anything. You can bake, broil, saute and fry them. To end my final days of being trapped out at the farmhouse, I wanted to make something spicy and with my favorite foods. I thought this recipe would be a good way to use the last of the tomatoes, kale, black beans and finish off the feta.

I halved the recipe as I only had one potato left and wasn’t cooking for anyone else. I added chipotle in adobo pepper to some sauteed onion and garlic to spice things up a bit. These three ingredients have become a staple in my cooking and add a nice smoky flavor to most foods. Cilantro and sour cream are not really my thing, so I opted for crumbled feta instead.

Home.

This meal was the perfect end to my first and hopefully last taste of winter. Walking the fields a few times a day and running into the property owners and their pups made things a bit more enjoyable. The snow provides a means to enjoy fires, sip wine, and relax. It forces alone time, which was needed and very much appreciated.
