Caroline Jarrett, thanks a lot for your feedback! You mention a very interesting moment with Apple iOS search example. Since the search form has only one input field and user are familiar with both it’s position and expected result from the interaction — it works OK. But you’re absolutely right about “ Placeholder text is not visible when the user clicks or types into the box” and it’s a serious problem for majority of UI form.
