3 HEALTHY VALENTINE’S DAY TREATS.
Valentine’s Day is usually all about sugar. Chocolates, cake-pops, pink sugar-glazed heart-shaped cookies… All the Valentines treats are indeed romantic, emotional and sweet, but also dangerously decadent and unhealthy, full of preservatives, refined sugars, palm oil and artificial colours. But we, from 2 Health App, are always there for you to give you great healthy options for each and every occasion. Here are our Valentine’s Day suggestions:
Vegan chocolate-coated strawberries
(makes around 30 strawberries)
500 gr fresh strawberries
190–200 gr vegan chocolate
1 tbsp. coconut butter
1 tbsp. chia seeds
1 tbsp. shredded coconut
1 tbsp. finely chopped raw nuts
A few drops of vanilla extract
A few drops of rum extract
- Wash the strawberries.
- Make the dry mixture: mix the chia, shredded coconut and chopped nuts is a bowl.
- Put the coconut butter in a saucepan. When the oil is melted, yet not boiling hot, add the chocolate. Keep on mixing until the chocolate is all melted and the mixture is homogeneous and smooth.
- Add the vanilla and rum extract and remove the pot from heat.
- Start dipping the strawberries on by one in the chocolate mixture. Then drizzle with the dry mixture.
- Carefully lay the dipped strawberry on its side on the baking sheet. Let the strawberries sit until the chocolate coating is set and dry to the touch.
- You can put the baking sheet in the fridge to speed this along. Leave a few strawberries coated only with chocolate. You can even double-coat these in chocolate.
St. Valentine’s Day Juice
5 small blood oranges
A piece of fresh ginger root (put as big piece as you fancy)
Put everything in the juicer.
Baked figs and strawberries with coconut yogurt
(per 1 serving)
4–5 perfectly ripe figs, stalks removed
1 tsp. coconut oil
1 tbsp. raw organic honey
½ tsp. orange zest
1 tbsp. freshly squeezed orange juice
1 tsp. vanilla extract
½ tsp. almond extract
1 tbsp. flaked almonds
Some dried rose petals
- Preheat the oven to 180 C (fan).
- Cut a cross in the top of each fig, then place them into a baking tray. Put a little bit of coconut oil into the top of each fig.
- Put the strawberries in the tray and scatter some oil over them as well.
- Drizzle the whole dish with honey, vanilla and almond extracts and orange juice. Lastly sprinkle over the flakes.
- Bake in the oven for about 10–15 min or until the figs are just collapsing.
- Take the dish out of the oven and sprinkle with the zest and the rose petals.
- Serve hot or warm with coconut yogurt or coconut whipped cream, or go for a non-vegan, dairy option: Greek style yogurt.
