Interview with Alexis Arvouet, restaurateur

Alexis has been living in Paris for the past 6 years where he also went to law school. “I realized over the years that I was not made to become a lawyer. Since that revelation, I have always been passionate about cooking and cuisine I decided to change my career path”.

Gladly, during his last year of law school in Paris he met a friend with a similar quest. Combing their same desire they started thinking about opening up a restaurant.

Last year that he went to Washington DC to finalize his studies. It was there where he discovered grilled cheese sandwiches. But not just any grilled cheese sandwiches — something worth taking back to Paris. His friend and him both decided to bring the idea back home, but with a French twist. They started developing the concept around Melted, their first restaurant which is due to open in March 2016. Melted is a grilled cheese/ tapas joint with the ultimate goal to deliver their interpretation of this iconic sandwich, whilst using all the variation of French cheeses. At the night the menu will feature cheese pairing with spirits, which is something totally new.

What was the last trip you went to?

I went to the US for 10 months, which included Washington, New York and Boston.

Where do you travel to get inspired?

Mostly the US to get ideas for take-away restaurants.

What do you take with you when you travel?

A light suitcase, a note pad, camera and music playing device.

What do you miss most when you are out of town?

That will be my friends, family, and the Parisian atmosphere. There is just something about the architecture and the feeling you have when you walk in some districts, that is very unique.

After your travel experience. Which is the worst airport:

Atlanta.

Not travelling at all versus travelling all the time?

I’d rather travel all the time because it makes you feel alive as you discover new cultures, tastes and people. I hate to stay in the same place for too long because I get bored easily.
