Yo man, what up?

Im good, man. Just thinking...

Two boys - well, young men - had just walked into the air-conditoned bakery on 30th and Spruce in downtown Philadelphia. One man wore glasses which, though he seemed not to notice, had smudges and dust across their surface. His glasses were in the embrace of black rims, which matched his charcoal- colored shirt, and tje black stripes running across his red sweatpants. His companion, a shorter gentleman with black, bowl-cut, hair stood next to him in a white T-shirt and sweat shorts.

Thinking about what?

...um...what's your favorite thing to do?

I don't even know why you asked, man! You know I love to cook! The aromas, the sauces, the smiles on people's faces when take that first bite - MMMmm! That's BLISS to me man.

Absolutely. I feel the same way about writing, and stories. ...So now, is there any aspect of cooking that you're not strong at?

Mmm. You know, I'm always trying to meet the tastes of the person eatin' my food, and I think I get so caught up in it, that I lose sight of my OWN taste and what I wanted to present in the dish.

Isn't that a good thing?

It can be. It can be. But it can...cause me to - hesitate when I don't know who I'm cookin' for. It's slows down the process... .

You can't move slow where I'm workin'! If you're holdin' up the line they'll throw yo' behind out the kitchen so FAST-

Yup! Yup! Guests should come in. Order food. Get food. And leave like THAT!

Okay, describe it to me: your vision of your restaurant. I know we've talked about it before, but the reason I asked is going to make sense, just tell me again.

...Its gonna' be a spot in my neighborhood. It's gonna be GOOD FOOD. Not that junk at the corner store. Good food. Something healthy AND affordable for the people there. And I want to hit their indi-VIDUAL tastes! So when Uncle Murry walks in I've got his asparagus quiche, and glass of Chocolate Silk with TWO drops of honey ready!

They're EVERYTHING to me, man!

Exactly! So why not spend your time learning THEIR tastes and THEIR preferences instead of working at some fine dining place where you don't even know the color hair of the person who just ate your food!!

Ill do that too. But thos job makes me a better cook. I have to create all kinds of things - stuff I and the people back hom have never even imagined! I may not WANT to do it, but I know it's going to help me get what I'm chasing!
