I think you are right on the point where you state “all the crap that has been put in wheat”. If you were to bake your own bread, with whole fresh flour, you would not need to omit gluten. It is all the 26 or so chemicals in bread, or what the store calls bread, that cause so many to be sick. Bread only needs 4 ingredients, flour, water, yeast, and salt. All the rest is indeed, crap. I cannot eat store bought bread for more than one day. So I bake my own. With the best flour I can find. I wish I could find an old fashioned miller, who still mills every few weeks, like I had back in Belgium. Bread rises and tastes better with fresh stuff.
