Toasted Cucumber & Crab Sliders

Just in time for summer, this refreshing protein packed treat is sure to please . The perfect mid day snack or finger food for any occasion.

Ingredients

  • 1 large cucumber (8–10 inches long, aprox. 10 oz)
  • 1/8 cup diced green onion
  • 6 oz shredded crab meat (plain, un-marinated)
  • 2 tbsp cup Toasted Sesame & Ginger Dressing (Litehouse Brand) • 3 tbsp fat free mayonnaise (Kraft)
  • 2 tsp paprika

Directions

  1. Partially peel cucumber.
  2. Slice cucumber into one and a quarter inch pieces
  3. Spoon out seeds of cucumber shaping a bowl like pit(do not scoop all the way through center)
  4. Slice green onion into small pieces
  5. In a medium size bowl evenly mix crab meat, green onions, mayonnaise and dressing.
  6. Spoon crab mixture into bowled cucumber pieces
  7. Sprinkle paprika over top crab mixture.
  8. Serve chilled
