Speaker highlight: Debby Tang launches new restaurant La Dotta

Last year (2016) Debby spoke to us about opening her new restaurant il Fumo - this year she’s launching La Dotta. Nothing stops this Bangkok-based foodie and restaurateur!

Debby and her husband Choti are the founders and owners of the Foodie Collection group which also own Vesper Cocktail Bar & Restaurant and il Fumo Charcoal & Cocktail. Their newest venture La Dotta Pasta Bar & Store is a casual Italian eatery focussed on fresh, handmade pasta using the finest local and imported ingredients. They aim to #makepastagreatagain and do this by focussing fanatically on craftsmanship, high quality ingredients and century old recipe traditions with a modern twist.

One of Debby’s main focuses for La Dotta is on accessibility — making high quality, fresh pasta accessible in price point, presentation and delivery to the everyday eater. Inspired by the couple’s travels throughout Italy, the pasta on offer is authentic and steeped in tradition served in an “upbeat setting” for a wider audience. They believe everyone should have the chance to enjoy pasta the way it was originally made — fresh!

Debby sees her multiple restaurants as an extension of herself. She is a passionate person, an avid food lover and has now created three very distinct dining venues. “It [the restaurants] represents who I am as a person, and like everyone, we have multiple dimensions to ourselves, depending on various situations. Owning multiple restaurants allow me to express this idea — a casual place to hangout with friends like La Dotta; a bistro with serious cocktails like Vesper; and a fine dining Italian place like il Fumo to celebrate special occasions — and that’s what makes me most happy.”

Support from the food and beverage industry as well as her customers for the newest restaurant La Dotta has been overwhelming, Debby mentioned. Having a supportive community is key and Debby and Choti have built this over the years with their success of their previous two restaurants. The opening of La Dotta with it’s attractive branding, casual feel and focus on high quality has brought the support of the community out in droves.

As for what’s in store for Debby in the upcoming months, she is dedicated towards ensuring “customer delight” across all of her venues. Once she and her team have things running smoothly her and Choti may look at opening something new and “not Italian-related” but for now we’ll just have to wait and see!

Debby Tang is a founding partner of Foodie Collection, a hospitality group that currently owns and manages Vesper Cocktail Bar & Restaurant, il Fumo Charcoal & Cocktail and now La Dotta Pasta Bar and Store. In her role as Director of Operations, she is in charge of service operations, human resource, restaurant opening management and accounting. Prior to co-founding Foodie Collection with her husband in 2014, she was working in Marketing at Jo Malone in its headquarter in London and studied MBA in Luxury Brand Management in Monaco. A Taiwanese native, she has lived and worked in many cosmopolitan cities including London, Shanghai and Paris, among others.
