How do you Scoop Hummus?

Babaganoush and hummus from Tannourine, San Mateo, CA

I can’t remember the last potluck I attended that didn’t include at least one kind of hummus in the appetizer spread. Pita bread is the traditional dipper, but you’ll see anything from carrots and celery to tortilla chips and even Doritos.

Hummus devotees have their own distinct methods for scooping. While technique varies, all of them agree on one point: You never use a spoon.

Method 1: Gently pull apart the two layers of pita bread so you have a much wider piece. Drop the bread over a small section of hummus like a tent. Pinch it.

Method 2: Hold the bread between your thumb and index finger to form a scoop.

Method 3: Tear off some bread and move it around the circumference of the dish or push it in a straight line down the middle. You’ll come up with a ton of hummus either way.
