Heavenly Keto Taco Casserole
This Keto Taco Casserole begins with a savory layer of seasoned ground beef and is topped with melted cheddar cheese and creamy sour cream. Baked to perfection, it features a zesty salsa layer and vibrant bell peppers. Ingredients:
- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (sugar-free)
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup salsa (low-carb)
- 1 cup chopped bell peppers (any color)
- 1 cup chopped tomatoes (optional)
- 1 cup chopped lettuce (for garnish)
- 1/4 cup chopped fresh cilantro (for garnish, optional)
Instructions:
- Preheat the Oven:
- Set your oven to 375°F (190°C).
2. Cook the Meat:
- In a large skillet, heat a little oil over medium heat. Add the diced onion and minced garlic and cook until the onion is soft, about 3 minutes.
- Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.
3. Season the Meat:
- Stir in the taco seasoning and water. Cook for another 2–3 minutes, until the mixture is well combined and the water is absorbed.
4. Assemble the Casserole:
- In a baking dish (about 8x8 inches), spread the cooked beef mixture evenly.
- Layer the shredded cheddar cheese on top of the beef.
- Spread sour cream over the cheese layer.
- Pour the salsa over the sour cream layer.
5. Add Vegetables:
- Sprinkle the chopped bell peppers and optional chopped tomatoes on top of the salsa layer.
6. Bake:
- Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.
7. Garnish and Serve:
- Remove from the oven and let it cool slightly.
- Garnish with chopped lettuce and fresh cilantro if desired.
