MATTAR PANEER

A simple dish of paneer and peas in a rich tomato gravy is ideal for dinner or lunch. You can have it along with chapati or rice.

INGREDIENTS

· 2 cups paneer (cubed, deep fried to a light brown)

· 2 cups green peas

· 3–4 green chillies

FOR THE GRAVY

· 1 tsp chopped ginger

· 1/2 cup grated tomato,

· 1/4 cup oil

· 2 tsp cumin seeds

· 2 Bay leaves

· 1/2 tsp turmeric (haldi)

· 1 tbsp salt

· 1/2 tsp

· 1/2 tsp red chili powder

· 1 tbsp coriander powder

· 1/4 tsp Jain kitchen king masala

· 1 tbsp chopped coriander leaves (for garnish)

METHOD

· Blend the ginger and chillies and tomatoes to a paste.

· Heat oil and add the cumin seeds and the bay leaves. Add the paste and saute till it turns brown.

· Add turmeric, red chili powder, salt, Jain Kitchen King Masala, and the coriander powder.

· Add the boiled peas, paneer and the green chillies and saute in high flame until smooth.

· Add two cups water, let it boil and simmer for 5–10 minutes.

· Garnish it with the coriander leaves.

PAV BHAJI

A popular Indian street food, Pav bhaji is a classic blend of spicy mixed vegetables cooked in spices and butter served with soft butter pav, hungry enough? Here’s the recipe;

INGREDIENTS

· 1 cup chopped cauliflower

· 1/2 cup chopped cabbage

· 1/2 cup fresh green peas

· 4 tomatoes medium

· 1 cup of water

· 2 tablespoon oil

· Salt to taste

FOR THE MASALA

· 2 tablespoon oil

· 1 tablespoon cumin seeds

· 1 pinch Hing

· 1/2 tablespoon coriander-cumin powder

· 1/4 tsp red chili powder

· 1/4 tsp Jain kitchen king masala

FOR GARNISH

· 1 tablespoon lime juice

· Chopped coriander leaves

METHOD

· In a pressure cooker add water, fresh peas, cabbage, cauliflower, and tomatoes along with salt and oil. Cover and cook on high flame for a while.

· After its cooked, mash all the vegetables.

· Now heat the oil in a frying pan, add cumin seeds, Hing, 1 tablespoon of coriander-cumin powder, red chili powder to taste. Add mashed vegetables, Jain Kitchen king masala and stir it well. Cover it and cook for 2 or 3 minutes.

· Lastly, squeeze in fresh lime and garnish with freshly chopped coriander leaves.

PANEER TIKKA MASALA

Paneer Tikka Masala is a flavorful gourmet dish that includes marinated paneer in a tasty tomato gravy.

INGREDIENTS

· 250 gms paneer

· 1/2 tsp salt (1/4)

· 1/4 tsp red chili powder

· 1 tbsp ginger paste

· 1/2 tsp coriander powder

· 1 tbsp yogurt

· 1 tbsp oil

FOR GRAVY

· 3 medium tomatoes

· 1 tbsp oil

· 1/2 tsp cumin seeds or jeera

· 1/8 tsp Hing

· 1 green chili

· 1 tbsp coriander powder

· 1/4 tsp turmeric powder

· 2 bay leaves

· 1/2 tsp sugar

· 1 tsp corn starch

· 2 tbsp coriander leaves

· 1/4 tsp Jain Kitchen King Masala

METHOD

· Mix ginger, salt, coriander, and yogurt with sliced paneer in a bowl, cover it and marinate for at least an hour.

· Make a puree of tomatoes and green chilies and keep aside.

· In 2 tablespoons of water mix the corn starch and keep it aside for a thick gravy.

· In a frying pan heat 1 tablespoon of oil on medium flame. Put the marinated paneer in a frying pan and stir-fry for about 3 to 4 minutes until it turns light brown.

· For gravy, add 1 tablespoon of oil in a frying pan. Add cumin seed, Hing, and bay leaves once the oil gets heated, stir for a few seconds. Add the tomato puree, coriander, turmeric, and red chili powder, cook it on a medium flame for about 4 minutes.

· Next add the corn starch, stir for few minutes until the sauce thickens.

· Add the stir-fry paneer in the tomato gravy and cook it for 3–4 minutes on low flame.

· Lastly, add Jain Kitchen King Masala stir slowly and cover the pan for a few minutes. Garnish it with coriander leaves.
