Kaiserschmarrn
Ingredients:
2 cups of flour
4 large eggs
1 cup of sugar
1 cup of milk
1 tsp of vanilla extract
1 pinch of salt
1/4 cup of raisins (optional)
Butter for frying
Instructions:
- In a large bowl, whisk together the flour, eggs, sugar, milk, vanilla extract, and salt until smooth.
- If using, fold in the raisins.
- Heat a large non-stick pan over medium heat and add enough butter to coat the bottom of the pan.
- Pour in the batter and cook until the bottom is golden brown and the top is set, about 5 minutes.
- Using two forks, tear the pancake into bite-sized pieces and continue cooking until crispy and golden brown on all sides, about 5 more minutes.
- Serve warm with powdered sugar and fruit compote.
