Frying is not great for health, so sauté instead. Compromise: use a good quality non-stick pan and use cooking spray, water, or broth. If it’s the fatty flavor you are seeking, then add in a teaspoon of good olive oil (measure it) at the very end of the cooking time. (This preserves the nutrients of the oil.)
