Stuffed peppers and tomatoes

Last week i ate stuffed green peppers at my job’s canteen. I liked the concept so today i decided to try my own version!

The Ingredient List:

  • 1 onion
  • 1 medium yellow pepper
  • 1 medium green pepper
  • 2 medium ripe tomatoes
  • 1 can of tuna (in water)
  • 6 to 10 small white mushrooms
  • 2 table spoons of ricotta cheese
  • Grated cheese (3 table spoons)
  • Herbes de Provence (1 tea spoon)
  • Paprika (1 tea spoon)
  • Olive oil (3 table spoons)
  • Salt and black pepper

The Preparation:

  1. Cut the lower base of peppers (the part without the stem) and reserve; carefully remove the seeds and pith (use a spoon if necessary);
  2. Cut the upper base of tomatoes (part with the stem) and remove the pith (discard the seeds and the liquid and reserve the rest);
  3. Chop the onion, the mushrooms and the leftovers of the peppers/tomatoes ;
  4. In a frying pan add the olive oil, the onion, the chopped tomatoes, salt and black pepper; Saute for 3 or 4 min;
  5. Add the chopped peppers and saute for another 4 min;
  6. Add the tuna, the mushrooms and the paprika; Saute for 5 min (be sure to stir very well) and turn the heat off;
  7. Add the ricotta cheese and stir until incorporated (rectify seasoning if necessary);
  8. Fill each pepper and tomato with the tuna mixture, sprinkle with grated cheese and herbs;

7. Place the peppers and the tomatoes over a sheet of parchment paper in a tray and bake them in a preheated oven at 200º C, for 40 min.
