The cleaner alternative didn’t “naturally” win. They needed help to put their nasty competitors (who would tempt poor customers with cheaper prices) out of business. Also, do you not give a rat’s ass about all the people who will be poisoned and ripped off by disgusting food products from fly-by-night operations that are out to make a quick buck.

The problem is, quality and safety cost money, so those who aren’t legally bound by it can always undercut prices and maintain some degree of market control among the poor. But hey, if those suckers ever MATTERED, they wouldn’t be poor, amirite?
