Using a Slow Cooker

Ingredients: (preferably all organic)

2 cups dried bertoli beans.

2 cloves garlic

1 small brown onion

3 ripe tomatoes

1 dash tamari

1/4 teaspoon raw brown sugar

3 tablespoons homemade bone broth (or any type of homemade stock)

1 fresh herb leaf found in fridge? (might be sage but need to double check!)

Method:

Rinse & soak beans in spring water overnight.

Drain and rinse the beans then add them to a pot of boiling (unsalted) water and cook for about an hour until they are soft.

meanwhile, slice the skin of the tomatoes in quarters and cover with boiling water for 2 mins. Then peel, chop and puree through a hand held food mill.

Grate the onion and garlic (chop further into a paste)

In the slow cooker, saute onion and garlic in a splash of olive oil until fragrant.

Add the fresh tomato puree along with the tamari, sugar, sage leaf(?), a three finger pinch of sea salt and a few good cracks of pepper.

When beans are ready, add to slow cooker cover and set to ‘slow cook’ for three hours.

Serve with buttery toast and a couple slices of bacon.
