Mum’s Prawn and Coconut Stir Fry
This South Indian recipe is so easy to make and super tasty! My Mum usually makes it with Chicken but I tried it with Prawns and it is equally delicious!
Ingredients:
- 250g Prawns (Peeled and deveined)
- 3 Small Onions
- 2 Green Chillies
- 3 Cloves of Garlic
- 1/2 Inch Ginger
- 1/2 Tsp Coriander Powder
- 1/2 Tsp Garam Masala
- 1/4 Tsp Chilli Powder
- 1/4 Tsp Turmeric Powder
- Salt to taste
- 1/2 Cup Desiccated Coconut
- 2 Sprigs Curry Leaves
- 2 Tbsp of Coconut Oil
- Coriander leaves for garnish (optional)

Method: Blend all the ingredients (except for the curry leaves, coconut oil and desiccated coconut) into a smooth paste.


Directions: Heat 2 tbsp of Coconut Oil and saute the blended paste on medium heat for about 10–15 minutes. Then add the prawns and once its cook through, add the desiccated coconut and a splash of hot water. Mix well and let it cook for another couple of minutes before taking it off the heat. Garnish with coriander leaves and serve with steamed rice. Enjoy!
