It’s almost summer! As the temperature rises for us in northern hemisphere, I start craving salads.. With so many fruits and vegetables in season, it’s a great no hassle meal with minimal cooking over the hot stove. I mostly throw in all types of veggies and fruits. For protein add a hard boiled egg, chicken ( any way you want) , chickpeas, smoked salmon, or any other legumes.
This particular one has peppers, tomatoes, egg, spring mix, chickpeas, olives, kale, Brussel sprouts, cucumber and chard.
