Easy Veggie Chilli

This is my ‘go to’ recipe whenever I haven’t been shopping as I usually have all the ingredients I need in the cupboards/fridge/freezer to make this.

Ingredients

1 pack of quorn mince

1 tin chopped tomatoes

2–3 tbsp tomato puree

1 onion (finely chopped)

2 cloves of garlic (finely chopped)

Approx. 300 ml vegetable stock

1 tin of Red Kidney Beans ( or chickpeas or in fact any beans!)

1 red pepper (you could also add more veg if you wanted to, mushrooms, courgette…)

mixed herbs, salt and pepper to season (sometimes I add marmite and worcestershire sauce to spice it up a bit)

Also once I have served the kids portions I add a glug of red wine and lots of chilli to give that extra ooomph!

Method

  1. Cook the onion and garlic in a little olive oil or coconut oil for a few minutes, add the mixed herbs and the red pepper and cook for another couple of minutes.
  2. Add the stock, beans, chopped tomatoes and tomato puree and bring to the boil.
  3. Add the quorn mince and then simmer for 20 minutes.

And thats it dinner on the table in less than 30 mins, super easy!

I like to serve it with wholegrain rice or if you are going carb free serve it with a green salad and a little grated mature cheddar on top and its a perfect mid week supper — enjoy!
