Homemade Chicken Tikka Masala

This is taken from Joe Wicks #Leanin15 book (I love all of his recipes!) and is really easy to make, healthy and the kids all love it!

Ingredients (to serve 4)
- 4 x 240g chicken breasts
- Juice of 1lemon
- 1 red onion diced
- 1 tbsp paprika
- 2 cloves of garlic
- 3cm ginger, roughly chopped
- 1 red chilli, finely chopped
- 3 tbsp tomato puree
- 1 tbsp coconut oil
- 1 tbsp garam masala
- 3 tsp tumeric400ml coconut milk
- 100g ground almonds (optional)
- Handful of coriander
Method
- Marinate the chicken in the lemon juice and paprika, stir to make sure the chicken is fully coated
- Put the onion, garlic, ginger, chilli and tomato puree into a blender with about 3 tbsps of warm water and blitz until smooth
- Melt the coconut oil in a pan add the blitzed onion mixture and fry whilst stirring for 2 minutes. Add the marinated chicken and continue stir-frying for a couple of minutes
- Add the garam masala and tumeric and stir to mix. Add the coconut milk and bring to the boil. Simmer for about 5 minutes or until the chicken is cooked.
- Remove from the heat and stir in the ground almonds and coriander
And thats it, so quick and easy to make, healthy and super tasty! Enjoy!
