Homemade Chicken Tikka Masala

This is taken from Joe Wicks #Leanin15 book (I love all of his recipes!) and is really easy to make, healthy and the kids all love it!

Ingredients (to serve 4)

  • 4 x 240g chicken breasts
  • Juice of 1lemon
  • 1 red onion diced
  • 1 tbsp paprika
  • 2 cloves of garlic
  • 3cm ginger, roughly chopped
  • 1 red chilli, finely chopped
  • 3 tbsp tomato puree
  • 1 tbsp coconut oil
  • 1 tbsp garam masala
  • 3 tsp tumeric400ml coconut milk
  • 100g ground almonds (optional)
  • Handful of coriander

Method

  1. Marinate the chicken in the lemon juice and paprika, stir to make sure the chicken is fully coated
  2. Put the onion, garlic, ginger, chilli and tomato puree into a blender with about 3 tbsps of warm water and blitz until smooth
  3. Melt the coconut oil in a pan add the blitzed onion mixture and fry whilst stirring for 2 minutes. Add the marinated chicken and continue stir-frying for a couple of minutes
  4. Add the garam masala and tumeric and stir to mix. Add the coconut milk and bring to the boil. Simmer for about 5 minutes or until the chicken is cooked.
  5. Remove from the heat and stir in the ground almonds and coriander

And thats it, so quick and easy to make, healthy and super tasty! Enjoy!
