Syrian Ful Medames

This is a classic Syrian dish eaten as a side item or main entree. Eat any time of day, breakfast lunch or dinner. Healthy, flavorful, low fat, vegan and satisfying. For those concerned about carbohydrates this dish should not be a concern.

This dish tastes fresh and flavorful when eaten immediately after preparation but tastes even better once refrigerated after the garlic and lemon has really had a chance to mix.

Ingredients

Chick peas, Small fava beans, Parsley, Tomatoes, Green onions, Yellow onions, One lemon, Lemon concentrate, Olive oil, Garlic, Salt

Preparation

1. Bring equal parts chick peas and fava beans to a boil

2. Finely dice: a) Italian Parsley, b) Campari tomatoes, c) green onions, d) yellow onions

3. Crush garlic into a paste

4. Gently hand mix ingredients being careful not to crush chick peas or fava beans

5. Add in lemon concentrate, pulp of fresh lemon, olive oil and salt

All ingredients should be too taste. If you like more garlic then add more garlic. If you like more lemon add more lemon. You are trying to achieve the flavor that makes you happy. The texture should have body.

This dish is usually served with a side of brine pickled cucumbers cut into long strips.

Serve cold or hot
