Bajan Bites: Banana Bread

As you can probably guess from our selection of recipes, we do have somewhat of a sweet tooth. Bananas are always plentiful and for those who don’t like them overly ripe, Banana Bread provides a great means of using over ripe fruit.

Ingredients

8 ozs flour

1 large egg

1/4 tsp salt

3 ozs margarine

4 ozs brown sugar

1 tsp vanilla essence

4 tsp baking powder

1/2 tsp ground cinnamon

3 medium bananas mashed

Method

  1. Preheat oven at 325°F, generously grease and flour a large loaf tin.

2. Cream the margarine and sugar until light and fluffy.

3. Beat in eggs and essence.

4. Add sifted flour, baking powder, cinnamon and salt alternately with mashed banana.

5. Batter should full baking tin 3/4 ways full.

6. Bake for 1 hour or until a tooth pick comes out clean when inserted.
