I too have done a lot of interviews in my life. In my traing one of the things I learned was to to chase affect. Getting to the feeling component can reveal aspects of a persons overt and covert attitudes toward the topic and it gives a richer experience of the interview for the interviewer and interviewee. As you rightly point out that body language almost always tells the truth, so listening involves all the senses, not just hearing.
