The structure is about developing new muscle memory through disciplined routine and practice. Like learning to play the cello or any musical instrument, first we learn the notes, scales, and arpeggios. Then we play music, and maybe even learn riff and improvise. It’s the same with the food and the kitchen: the individual techniques, recipes, and tools of the kitchen (including my Sharpie) come together into a meal.
