Chili Sin Carne

Having grown up on the Mexican border, becoming vegetarian later in life has been an occasional struggle. I could hardly find a decent chili outside the Southwest, let alone a vegetarian version. Creating my own recipe chili sin carne is a personal victory!

The recipe is straightforward, but a few of the ingredients might be unfamiliar in some regions. I’ll present the recipe as-is and answer any questions in the comments.


Protein Team

  • 1 pkg Upton’s Chorizo
  • ½ onion, diced
  • 1 tsp achiote sauce (½ tsp achiote paste + ½ tsp water)
  • 2 cloves garlic, minced

Cooking Steps

  1. Mix together achiote paste and water into a sauce.
  2. Saute meat team with achiote sauce.
  3. Dump everything into a slow cooker.
  4. Add more spice or thickener to taste.
  5. Simmer for 7 hours.
