
An Even Shorter Rant on Technique
Allow me to expand on thebasics
On episode 3 of A Caterer’s Podcast I discussed the deep adamancy for the home cook that is following a recipe; most often heard when baking.
A quick summation of the episode I stressed mise en place (everything in its place), reading a recipe not once but twice (one time a skim, the second time a deep reading and understanding) and how enough recipes done develop into technique.
Technique is the base. Recipe is the melody.
Technique is the base. Recipes are the melody. In everything there is a foundation. Foundations are set to be built upon and that is where recipes come in. What I mean by this is, have a recipe for a cake, the technique portion comes in where you know this recipe will contain flour, egg, butter, milk, sugar, vanilla, etc. The recipe (melody) is the amount of cocoa powder needed to make that cake a chocolate cake.
This is something I stress in all things not just cooking. Do not approach the kitchen with the intention to reinvent the wheel, but in fact go in wanting to learn how to make a wheel, the physics that makes it roll.
