Zucchini Fritter with Homemade Tomato Sauce
Today we made tasty, economic and wholesome Zucchini Fritters. The fun thing about this recipe was we could add to the base according to individual tastes. If you wanted a bit of zest or spice ads in chilli or if you wanted some meat you could add salmon. Give it a go & enjoy — we did!
Fritter 1 large Zucchini diced, 1 onion diced, 1 tsp salt, 2 eggs, Olive oil as needed, Flour (grinded buckwheat & oats), Milk
Use a coffee grinder to grind buckwheat & oats to create flour. Set aside. (We used a coffee grinder). Put zucchini, eggs & onions into a bowl. Stir through. Add flour and milk and mix together. Add salmon or chilli if desired at this point. Roll mixture into even size balls ready to be cooked. In pan heat oil when pan is hot put fritters in and cooks until cooked through. Serve with tomato sauce.
1 chopped onion, Tomato paste or tom toe puree, Olive oil, Salt to taste, Sugar, Water
Mix together ingredients in a bowl. Put into saucepan. Cook until onions are cooked. Serve with fritters.
