Brunost is a Norwegian cheese made from whey and milk or cream. It is boiled until it caramelizes, resulting in a golden brown color.

It tastes like savory fudge. Which makes sense, as it’s essentially milk chocolate without the cocoa (or the boiling).

It turns out that caramelized lactose burns extremely well, as the world discovered in January 2013 when a truck carrying 27,000 tons of brunost caught fire in Norway’s Brattli tunnel.

Owing to the extremely high fat and sugar content of brunost, firefighters could not reach the blazing tunnel for four days.

Police officer Viggo Berg stated that the cheese burns “almost like petrol if it gets hot enough”.

This incident has been nicknamed ‘the goat cheese fire’ and is one of many notable cheese fires.
