The Lazy Vegan: Day Four

I will be the first to admit, I am a weak individual. I am ashamed to admit after almost three days of going strong, the smell of cooking ramen got to me last night. I had a bowl of it and indulged myself. Does that mean I have thrown in the towel and given up? No. It has taken me a while to realize that I am more than my mistakes, big or small, and this small mistake was merely a set-back. It was not, by any means, a failure. I am back again, strong and determined.

Part of that determination comes from my weigh in this morning. I had originally intended to only step on the cursed scale once per week, only posting updates every two weeks, but this morning’s progress has me so baffled.

Folks, I am down ten pounds since starting this journey on Friday, the first of the year! I didn’t expect more than a pound or two, but to have dropped to three-hundred and ten pounds over the course of a weekend is mind boggling. I have high hopes now for the coming weeks. As of today I am incorporating my two-hundred crunches back into my daily routine and my husband is saying he will work out with me as well, so that is encouraging.

As for meals for today, I have two small potatoes that I am shredding. I roasted some red bell pepper, cubed, and chopping up some green onion and mushrooms. Cooking that all up in a bit of coconut oil and seasoning it with a bit of salt and pepper. I am looking forward to this concoction and will post in tomorrow’s blog.
