The Best Pancake Recipes

It’s one of the most delicious days of the year — Pancake Day. Traditionally, every Shrove Tuesday was the last day before lent (so not long until Easter, folks!) where people would gorge themselves on fat before fasting for 40 days.

But enough history! Here’s how to win at Pancake Day this year, whatever your preferences.

Traditional English Pancakes

A little lemon gives your pancakes a lot of zest

You will need:

  • 100g plain flour
  • 2 large egg
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying
  • lemon wedges, to serve (optional)
  • caster sugar, to serve (optional)

Step One — Put the flour, eggs, milk, 1 tbsp oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. Set aside for 30 mins to rest if you have time, or start cooking straight away.

Step Two — Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper. When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.

Step Three — Serve with lemon wedges and sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.

American Style Pancakes

You will need:

  • 1 tablespoon baking powder
  • 1 pinch of salt
  • 1 teaspoon white sugar
  • 2 large eggs (beaten)
  • 30 grams butter (melted and cooled)
  • 300 millilitres milk
  • 225 grams plain flour
  • butter for frying

Step One — The easiest way to make these is to put all the ingredients into a blender and blitz. But if you do mix up the batter by hand in a bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug: it’s much easier to pour the batter into the pan than to spoon it.

Step Two — Heat a smooth griddle or pan on the stove.

Step Three — When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it’s time to cook the second side, and this needs only about 1 minute, if that.

Step Four — I get about 16 silver-dollar-sized pancakes out of this.

Quick and Easy Vegan Pancakes

You will need:

Step One — Set out all your ingredients.

Step Two — Set a stove element with a pan to medium heat.

Step Three — Combine the 4 dry ingredients (flour, sugar, baking powder — two Tablespoons, not two Teaspoons as some have suggested, salt) in a bowl.

Step Four — Add the soy milk and vegetable oil to your mixture. Mix until smooth.

Step Five — Now the pan should be ready for your batter, so spoon one pancakes’ worth of the mixture into the pan.

Step Six — Flip [carefully] when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.

Step Seven — Repeat until the batter is gone, and try not to eat them all while you’re cooking them.

Gluten-Free, Guilt-Free Pancakes

You will need:

  • cup flour (whichever kind you prefer)
  • 330 grams almond meal
  • 1 tablespoon ground flaxseed
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 3 large eggs
  • 180 mL unsweetened almond milk, light coconut milk, or milk
  • 2 tablespoons extra-light olive oil, walnut oil, coconut oil, or butter, melted

Step One — In a medium bowl, combine the almond meal, flaxseed, salt, and baking soda.

Step Two — In a large bowl, whisk the eggs, then add the milk and oil or butter and whisk thoroughly.

Step Three — Gradually whisk the flour mixture into the egg mixture. Add more milk as necessary, one tablespoon at a time, to reach pancake-batter consistency.

Step Four — Lightly oil a skillet and heat over medium heat. Pour 4 tablespoons of batter onto the skillet. Cook for three minutes, or until bubbles form and edges are cooked. Flip and cook for three minutes or until underside is lightly browned. Repeat with remaining batter.

Step Five — Serve with desired toppings such as Greek yoghurt or bananas.
