Veganuary — Day 4
Kym Ellis

James Lees I do plan ahead for dinners but I find it hard to do it constantly for all meals.

I don’t like eating that much. If I could have a superpower it would be to not need to eat to survive.

Given an opportunity I will absolutely skip a meal in the face of saving time and eating a snack instead.

I used to eat cereal for dinner.

What I am saying is, I’ve had an unhealthy relationship with food in the past, and removing all my options makes it dangerously easy for me to go back to that.

I know the responsible thing to do would be to just make some time and plan all my meals and cook things ahead of time. But the thought of that depresses me.

I work hard, so I don’t feel guilty for convenience lunches in that respect. It’s just annoying that there aren’t many vegan options.
