Quick but healthy breakfast? As a busy single mom of a 2 1/2 year old, it’s extremely important for me to find time efficient ways to get nutritious meals into my days. Sometimes I’m so busy that I’ve fed my son and forgotten to feed myself and by the time it’s 1:00 pm I find myself desperate for a meal that takes less than 5 minutes to obtain. As a mother who reserves fast food only for extremely desperate situations and road trips, it was almost mandatory for me to find a way to keep myself fueled for the day while integrating whole fresh foods. I’m truly a person who thinks ingredients are important, and while I sometimes rely on that cup of black coffee to keep me going, foods that deliver natural energy are always my backbone to getting through a long day. Today I decided to test how much time it would take to get a nutritious meal in that I could enjoy at home or on the go. I’m sure a few of you are familiar with Acai. If you’re not, Acai is an Amazonian berry valued for it’s high value of antioxidants, heart-healthy fats and fiber. What’s better? It comes readily available in a sorbet to easily create smoothie bowls and it’s incredibly delicious. To save time, I pre-sliced my fruits last night after my son went to bed. Waking up this morning all I had to do was scoop my acai in the bowl and decorate it with whatever garnishes I wanted. I sometimes feel a beautiful presentation keeps us excited to devour what is placed in front of us but I realize I don’t always have a breezy saturday morning to make art out of breakfast. I more realistically will probably end up throwing all these ingredients in a jar, chucking the spoon, and finding a way to pour it into my mouth while keeping one hand on the steering wheel, rushing my kid to daycare. Whether you make this a pretty bowl or a thrown together jar, you can rest assured you’re getting some vibrant healthy ingredients to help keep you full, satisfied, and provide you with natural energy. I won’t bullshit you, a cup of coffee never failed to add an extra boost ;). For your bowl you can add whatever you’d like but I try to pack in as much nutrition as I can. Below I will provide you the ingredients and my reason for choosing them.

To recreate this bowl you’ll need:

One pint Sambazon acai sorbet, add in your desired amount, you can mix with coconut milk for a creamier consistency (Can be found at most healthy grocery stores such as Sprouts or Whole Foods, remember, these little berries are anti-oxident power houses)

Purely Elizabeth gluten-free granola (Feel free to use a full-blown gluten granola if you’d prefer, either way it’s a good way to add in fiber and a little crunch)

Sliced fruit (I used strawberries and bananas, pretty self-explanatory)

Whole Berries such as blackberries or blueberries (Not only are they gorgeous but dark berries are higher in vitamin c than other berries relatives)

1 spoon full chia seeds (new to these little guys? I promise they’re more impressive than using them for chia pets. They are among one of the most nutritious foods on the planet. Loaded with fiber, protein, omega-3 fatty acids and micronutrients)

Almond butter (for added healthy fat and protein)

Coconut oil (High in Medium chain fatty acids which are good for the brain and the waistline, lauric acid, and healthy cholesterol, a quick trip to google can explain in more detail why this is so beneficial.)

Raw Hemp Hearts (High in easily-digestible protein, EFA’s, and Omegas)

Have I lost you yet? That’s okay. Here’s the easy part. Throw your acai sorbet in a bowl and top with whatever toppings you desire. However you chose to serve it, I promise you won’t be disappointed.
