The “it” place to see and stay

Vail, Colorado is world-renowned as the “it” place to ski or ride in the winter as well as the best place to enjoy the unparalleled beauty of summer in the mountains of Colorado. No other mountain town has the shopping, resort activities and luxury resort accommodations that Vail does. The hotel that tops the “best of the best” list is The Sebastian — Vail. Now one of my favorite luxury hotels on the planet in company with such memorable hotels as the Ashford Castle in County Mayo, Ireland and Hotel Des Indes in the Netherlands. The Sebastian earned a place on this list with its excellent guest-oriented staff (five-star level) its unique overall architecture and décor (a brilliant fusion of European, modern and Colorado rustic), its beautiful two-level residences and its new chef-created meal program.

I had the opportunity to stay at the lovely Sebastian over a recent holiday weekend along with my family. The children, although mostly grown, each got in touch with their inner child as soon as we stepped into the lobby. While I checked in with the attentive front desk staff, they each peeled off in various directions eagerly. One headed to the luxe modern library just off the lobby (complete with virtual aquarium and chess), one to the outdoor pool deck and one fell prey to the lure of the smell of essential oils coming from the spa shop. After rounding them all up, we were shown to our room.

The residences

Our room was a two-bedroom residence, which is much more than a room and more than a condo. The front door opened to an entry with washer and dryer closet. To the right was a bedroom with two roomy beds and a private bathroom. To the left was a staircase leading to the upper level. The first detail to catch my eye was the ceiling. In stark contrast to the typical hotel “bed in a box” layout, the residence had a warm and inviting living space with a ceiling full of angles and faux exposed beams. The Sebastian is the answer for anyone searching for a way to combine every comfort from home (soft throws, a perfect bed, etc.) with the benefits of a luxury resort such as room service and twice-daily housekeeping. The gourmet fully stocked kitchen and dining table for six were nice touches. The large master bedroom with king bed and bathroom completed the space. For two days, our residence was home base for our mountain adventure. We found boutique shops, art galleries, locally owned coffee shops (Yeti Coffee was a clear family favorite), mini golf, fountains to play in and more.

In-residence meals

I’ve left the best for last, though. The Sebastian in Vail has just launched a new meal program that is sure to receive press attention. In-Residence Meals allows guests staying in the residences to become chef for an afternoon or evening right in their own rooms. Gourmet meal ingredients are delivered to the room, pre-selected for quality and pre-measured. Easy directions and an apron accompany the meal. In short, guests can have all the satisfaction of preparing an outstanding meal without the hassle of shopping, chopping and measuring. I was the chef for our delivered meal and felt proud of what I made in half the time and with a fraction of the effort the meal could have taken. The pappardelle topped with lobster, artichoke hearts and shaved parmesan was absolutely delicious. The side dish was an already prepared chilled tomato soup — all I added was the (incredibly) fresh basil on top. The fruit tarts (they arrived pre-made as well) were heavenly. The hotel has a variety of full meals that include an entrée, side dish and dessert from which to choose and will graciously accommodate most requests, such as gluten-free, vegetarian and more. It is important that you not expect a entirely pre-prepared meal when trying out the program. This is specifically suited to those who would like to do just a little cooking. I loved it. When I return to The Sebastian, I’ll be trying out another meal.

My recommendation

Vail is just as beautiful in the summer as it is in the winter. The Sebastian is the best resort in Vail, so your choice is clear! Make one of my favorites one of your favorites. Don’t miss out on the new In-Residence Meals as well. It will be a highlight of your stay.
