Ingredients
- 2 pounds boneless, skinless chicken thighs

Instructions

- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the chicken to the pot and cook until browned on all sides, about 5 minutes.
- Add the green chiles, chicken stock, cumin, oregano, chili powder, salt, and pepper to the pot. Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
- Simmer the soup for 30–40 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the pot and shred it with two forks.
- Return the shredded chicken to the pot and add the roasted hominy. Simmer for another 10–15 minutes, After adding the roasted hominy, simmer the soup for another 10–15 minutes to allow the flavors to meld together. Taste the soup and adjust the seasoning as needed with additional salt and pepper.
