Green Chile Chicken Posole

Now that you know a little bit about the history of posole, let’s get to the good stuff: the recipe for Green Chile Chicken Posole. This recipe serves 6–8 people and takes about 2 hours to prepare.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 cans (29 ounces each) of hominy, drained and rinsed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cans (4 ounces each) of diced green chiles
  • 4 cups chicken stock
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  • Preheat your oven to 400°F. Spread the drained hominy out on a baking sheet and bake for 20–25 minutes or until golden brown and crispy.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the chicken to the pot and cook until browned on all sides, about 5 minutes.
  • Add the green chiles, chicken stock, cumin, oregano, chili powder, salt, and pepper to the pot. Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
  • Simmer the soup for 30–40 minutes, or until the chicken is cooked through and tender.
  • Remove the chicken from the pot and shred it with two forks.
  • Return the shredded chicken to the pot and add the roasted hominy. Simmer for another 10–15 minutes, After adding the roasted hominy, simmer the soup for another 10–15 minutes to allow the flavors to meld together. Taste the soup and adjust the seasoning as needed with additional salt and pepper.
