Recipe for New Mexican Style Breakfast Burritos:

Ingredients:

  • 4 large flour tortillas
  • 8 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cooked ham
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions:

  • Preheat oven to 350°F (180°C).
  • In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the onion, green bell pepper, and red bell pepper, and sauté for 2–3 minutes until they begin to soften.
  • Add the diced ham to the skillet and sauté for an additional 2 minutes.
  • Pour the egg mixture into the skillet and stir gently to combine with the vegetables and ham. Cook for 3–4 minutes, stirring occasionally, until the eggs are set but still moist.
  • Warm the flour tortillas in the microwave for 10–15 seconds or in the oven for 2–3 minutes.
  • Divide the egg mixture evenly between the tortillas. Top with shredded cheese and chopped cilantro.
  • Fold the bottom of each tortilla over the filling, then fold in the sides and roll up tightly to form a burrito.
  • Place the burritos seam-side down on a baking sheet and bake in the preheated oven for 5–7 minutes, or until the cheese is melted and the tortillas are lightly toasted.
  • Serve the breakfast burritos hot, garnished with additional chopped cilantro, if desired. Enjoy!
