I tend to eat the same easy meals over and over again. If it ain’t broke, don’t fix it, right?! Well, I’ve been taking some chances and trying new things lately and this is one of the WINNERS from all that. When inspiration strikes in the kitchen you gotta go with it… I took my usual approach of “Strategic Leftovers” (i.e. cook once, eat twice) with last night’s chicken curry leftovers, combined a new ingredient (the Tumeric Paleo Wraps from @julianbakery) and whipped up something on the fly to tie it all together and flavor up my spring mix and sprouts (homemade paleo curry aioli: @primalkitchenfoods Mayo, lemon juice, tumeric, cumin and curry powders to taste). So now I’m feeling proud and excited and satisfied… and quite full 😉 What’s for lunch today?
