Halibut Fish Taco



In the fridge:
Halibut fillets, broccoli, tomatoes, corn, Greek yoghurt, butter, spinach pita wraps
In the pantry:
Cumin, paprika, chilli powder, garlic, fresh cilantro, thyme, oregano and dill, olive oil
The cook:
Vegetables: I always grill corn and tomatoes on the hub (naked flame!) before I stick butter, salt and pepper on and shove them in the oven.
Fish: coat with olive oil, minced garlic, cumin, chilli, thyme, paprika, salt and pepper (I find crushing everything in a pestle and mortar first helps)
Sauce: chopped cilantro, oregano and dill mixed with Greek yoghurt (salt and pepper to taste)
1. Start the corn in the oven at 220. Leave for 10 minutes
2. Stick in fish and tomatoes. Cook for 20 minutes.
3. Make the sauce.
4. Heat wrap of choice. We LOVE spinach wraps.
5. Cook broccoli in a pan with garlic pieces, lime juice, salt and pepper.
6. Serve. People can mess about and wrap however they like.
