It is not always easy to be healthy–especially during the summer. With carnivals and theme parks unabashedly offering cotton candy, hot dogs, and funnel cakes at every turn, many people find it extremely difficult to say no. There has been a lot of research surrounding diets and healthy living. Many people believe that starting each day with a healthy breakfast is the best way to make healthier decisions throughout the rest of the day. So when I came across, it inspired me to share some of my favorite low carb recipes!

Wait, What Is is an awesome website that is dedicated to foods that are–you guessed it–low carb. I like this website because it is set up almost like a clothes website (and I really know how to navigate those!). This site was founded by an amazing woman named Elyssa Blissenbach, M.D. Blissenbach, a Board Certified Internist who has practiced medicine for more than 15 years, is the founder of Blissful Wellness, a medically supervised weight loss clinic within her practice to help patients safely lose weight.

So now that you all know a little bit about and it’s founder, it is finally time for the recipes!

This first recipe is the bee’s knees! Typical granola has crazy amounts of grains, oats and tons of sugar. But no worries, this is almost the complete opposite of that! Oh apple butter. Shall I compare thee to a summer’s day? I say yes! Apple butter is great on almost anything! I usually like it on whole wheat bread with peanut butter. A modern take on the classic PB&J. You can find apple butter here!

Here is another one of those recipes that will make you feel like a professional when you are all done cooking. With plum tomatoes, basil, and fat-free Parmesan cheese, this little breakfast will give your taste buds just the kick they need to wake up in the AM. You can find the recipe here.

These are some of my best recipes. And believe me, I am not that great of a cook, but these are all simple, fast, and easy to prepare.
