Why do we worship Lord Mahadev as Shivling , Shivling history -

Shivalinga (Sanskrit: लिंगं, लिंग; i.e., "symbol" or "sign") is a symbol of the Nirguna Brahma entity of the Supreme Lord Shiva. Meditating Shiva is expressed with the help of this symbol, Shiva is usually worshiped in Shivalinga in Hindu temples, Shiva is immersed in self-meditation. He also advised all people to be self-absorbed and meditative.

"Layang jati iti lingam" - meaning one in whom all things are obtained, hence linga. The word linga originates from the word satskrit lingam which means symbol or sign. In Bengali, this word is used in grammar to identify a person or object as male, female or cleavage. The literal meaning of the word Shivling is the head of Shiva. In this case it has replaced the word penis in Bengali. Shiva has 3 white spots on the penis which are on the forehead of Shiva, which is called Tripundra. If Shivling meant any genitals, then there would not be those 3 white tilak lines on top of Shivling. Shivling consists of 3 parts, the lower part of all is called Brahma Pith, the middle part is called Vishnu Pith and the upper part is called Shiva Pith. According to a general theory, the Shivalinga symbolizes the primordial and infinite being of Shiva in the form of a primordial and infinite pillar.
