As someone who has worked in a Vietnamese restaurant before, and grew up with my mom cooking authentic Vietnamese cuisine, the simple answer is this — some people just don’t “get how to eat” pho, as my mother would put it. I have witnessed customers take a few bites and then have to send the bowl back because they don’t like the fish sauce or whatever. Most Asian people still love pho, though. :P
