48 hour diet log. What do you think?

I get a lot of questions about what I eat so I wanted to write it down and share. This is what I ate Monday and Tuesday of this week. Side note is that I am going through a move so I was avoiding grocery shopping which limited my options. Here ya go:

Monday 2/21

Breakfast:
6 eggs
Banana
Cup of coffee w/ coconut oil

Shake:
Banana
Apple
Scoop of Protein
Oatmeal
Scoop of peanut butter
Cinnamon

Lunch:

Salad:
Half head of cabbage
2 onions
Can of tuna
1/4 cup olive oil
1 oz. apple cider vinegar
Sea salt

Snack:
Chicken leg
1 cup of mexican rice

Apple

Post-workout:
Protein Shake w/ 1 scoop of protein, msm & dea earth

Dinner
6 eggs
1/4 cup cheese
1 sweet potato

Cup of coffee w/ coconut oil

Snack
Cabbage salad
Onion
Can of tuna
1/4 cup olive oil
1 oz. apple cider vinegar
Sea salt

2 apples

1.5 gallons of water

Tuesday 2/24

Banana
5 eggs
Sweet potato
Cup of coffee w/ coconut oil

Snack:
Cup of oatmeal
Banana
Apple
Scoop of peanut butter

Lunch
Cup kidney beans
Can if tuna
2 onions
1/4 cup olive oil
Sea salt
1 cup green beans

Post-workout:
Protein Shake w/ 1 scoop of protein, msm & dea earth

6 eggs
Sweet potato

5 gallons of water
