The journey of the Humble Cheesecake

With it’s origins around 400 years ago in Greece, the cheesecake is everyone’s favorite dessert today. If you have had the lucky chance to consume a slice of a proper cheesecake you know why it wasn’t lost in the pages of an old history books of funky things people used to consume. Back then cheesecake was given to athletes usually before their performed their respective sports. Cheesecake was considered a resource of great energy. The recipe was also simple back then including cheese, wheat, honey and flour and was also used as a wedding cake by the Greeks.

The Romans were on a conquering spree and they came to Greece too. That is how cheesecake became a part of the Roman culture. Rome was good at imbibing things from every culture as they conquered most of Europe as the old adage goes “You don’t go to Rome, Rome comes to you”. Hence the Roman conquest is largely responsible for carrying the Cheesecake recipe to various parts of Europe. Romans made their own version of the Cheesecake. They put in crushed eggs and cheese into one basic variation of the recipe to make it more of their own.

Times went by but the Cheesecake stuck around. By the 18th Century the cheesecake took on the recipe that we are familiar with today. The New York style cheesecake we all love is the most famous recipe of Cheesecake we know today. The plain yet buttery smooth texture feel and taste of the New York Cheesecake comes from eggs, a lot of them mixed into the cream cheese mixture. Other places in the United States also put their spin on the recipe. Like in good ol’ Philly they make their Cheesecake lighter and fluffier. Up in Chicago, they make it more sour on the cream to make it smoother. Down south, in Missouri they like a topping on their slice of cheesecake.

Cheesecake has ginormous number of recipes and they spun around various styles around the world. In Japan, they like to use egg whites and cornstarch for their cheesecake while in Greece they use the feta cheese. The Germans use cottage cheese for their cheesecake while the Italians prefer the ricotta cheese for theirs.

No matter how people around the world do it, the Cheesecake is a wonderful food which has stood the test of time and emerged as a winner in the lineage of cakes worldwide.
