Christmas Porridge (is all I want for Christmas)
Christmas pudding porridge. Warm, soft, and sweet. Various fruits and nuts in every bite. Spice. Brandy custard. I’m not waiting for Christmas; breakfast IS Christmas. Every freakin’ day that I choose it.
Ingredients:
Oats
Nut milk
Raisins
Currants
Slivered almonds
Walnuts
1/2 carrot, grated
1/2 teaspoon, cinnamon
A big pinch of nutmeg
A few pieces of finely-chopped crystallized ginger (optional)
1–2 tablespoons of vegan brandy custard
Method:
Prepare your porridge base. Folks. It’s been nearly a year now. 51 recipes. Please tell me you know how to prepare your oats?? Okay. I’m being mean. Some of you may not have seen the other 51 recipes. I hope you go back and see all the hard work I did for you. I’ll accept that thanks in advance :)
I prefer putting the fruit ingredients early through the cooking process because I like the fruit really soft. And fruits like porridging about too.
So throw in the raisins, currants, slivered almonds, walnuts, grated carrot, cinnamon, nutmeg, and maybe even a few pieces of finely-chopped crystallized ginger. If you put too much dried fruit in, you’ll feel like you’re just munching on sugar. You might feel sick. Or you might enjoy it. I think a spoon of each thing is probably enough though? But you might like currants more than raisins. I don’t know.
You could toast the nuts in a little fry pan and mix them through at the end so you get a nice balance of goo and crunch.
Add a dollop of brandy custard. No brandy custard? No worries. Just add a shot of brandy, stir it through and then the custard on top. No need to count your Christmases anymore.
