I used to travel to Tokyo all the time and a friend knew the chef at a place near the Imperial Palace hotel. This was simply a friend testing my limits but what great sushi! I also had shrimp. I saw the shrimp, saw the cleaver and was given the shrimp, sans head, while the tail was still moving. The head came back 3 min later having been deep fried. It was like potato chips!
