Introduction

Spring roll were originated in East Asian cuisine but has gained worldwide popularity because of their delicious taste, crispy exterior and tasteful filling. Filling of spring rolls vary on personal taste or regional preferences but it’s usually made from chicken, vegetables, sauces and roll sheets. Spring rolls served as appetizers, snacks and also can serve as main course.

Ingredients

· Vegetable/ cooking oil 2–3tsp

· Minced garlic 1tsp

· Chicken 500g (boneless)

· Shredded cabbage 2cups

· Capsicum 1(medium)

· Carrots 2(medium)

· Chopped green onion 1cup

· Salt (as per taste)

· Black pepper (as per taste)

· White pepper powder 1tsp

· Soy sauce 1.5tbsp

· Chili sauce 1.5tbsp

· Sesame oil 1tsp

· Roll sheets 20

· Cornstarch 2tbsp

· Vegetable oil for fry

Preparation

The step-by-step procedure for the preparation of crispy crunchy and delicious chicken vegetable spring roll is given below:

· First wash all the vegetables and chicken and leave them to dry. When dry, cut all the vegetables and put them aside. Cut also chicken into small pieces.

· When you are done with vegetables and chicken, put a pan on stove and turn it on.

· Pour 2–3tsp vegetable oil in a pan and when oil heated up, add minced garlic in the pan and cook it until its color turn into light brown. Once garlic color changed, add chicken and cook it for 2–3 minutes.

· Add shredded cabbage, capsicum, carrots and green onions in pan and stir it for 2–3 minutes until vegetables are softened

· Pour soy sauce, chili sauce, sesame oil, salt and pepper over the vegetables and stir it until the sauce thickens and coat the vegetables.

· Turn off the stove and let it cool.

· Take cornstarch and add some water in it. Mix it well and make slurry.

· Take a roll sheet, place some mixture (2tbsp) on it and fold sides of sheet to enclose mixture. Roll up tightly and seal the edges of roll sheet with a little bit slurry to make sure they stick

· Repeat the same process with remaining sheets and filling and make all spring rolls.

· Put a frying pan on stove and add oil in it. When oil heated up, add a few spring rolls in the pan carefully and fry them until their color turns into golden brown and then take them out in a plate.

· Repeat the same procedure with remaining spring rolls until all rolls are fried.

· Your homemade spring rolls are ready; enjoy it with your favorite sauce.

Note: you can customize spring roll filling according to your taste preference by adding or substituting chicken, any vegetable or sauce.
