Simple White Soybean Curry

Curry can send shivers down noveau home chefs’ spines, but it can be conquered! Yes, you, a non-cooker, used to eating pre-made, microwaveable foods can also master a simple curry. It all starts with a calm mind, the right ingredients and of course, owning a few utensils.
Ingredients
- Himalayan White Soya Beans — 1 cup
- Oil — 3 tbsp
- Cumin Seeds — 1.5 tsp
- Chilli Powder — 2 tsp or to taste
- Turmeric Powder — 1 tsp
- Garam Masala Powder — 1 tsp
- Salt to taste
- Handful of cilantro/coriander leaves
Directions
- Wash and soak soybeans overnight. Next day drain them and add it to pressure cooker.
- Cover with water. Pressure cook for 4 whistles, simmer the pan and cook on a low heat for 10 mins.
- Turn off the heat and let the steam go all by itself. Open the cooker and set aside the dal along with cooking liquid.
- Heat oil in a pan. add in cumin seeds.
- Add in chilli powder, turmeric and garam masala powder.
- Saute well in the oil.
- Add in the cooked dal along with the cooking liquid. Add some salt. and bring to boil. Simmer.
- Add coriander leaves and mix well.
- Serve with Himalayan Village Rice.
