One more tip on plates. Americans (more than other nationalities) tend to over-serve themselves at buffets. So, don’t get a 12" round plate. Get an elegant looking 10" by 12" plate, or a 8" by 12" plate — -an oval. Why? Because it’s big enough for standard sized portions of a main, a side, a bread or salad, but if you pile on food, you quickly run out of room and it’ll be unstable. If people want more at a buffet, they can go back for seconds, but at least your whole party will be served once without running out of food.
